Sean’s Mom’s Cheesy Potatoes
Serves: 12
Prep Time: 1 hour 15 minutes
Ingredients
- 36 ounces shredded frozen hash browns
- ½ cup melted butter
- 1 tsp salt
- ¼ tsp pepper
- ½ chopped yellow onion
- ½ can of cream of celery
- ½ pint sour cream
- ½ pint plain yogurt
- 1 cup shredded sharp and Monterey Jack cheese
Topping
- 2 cups crushed corn flakes
- ¼ cup melted butter
Directions
- Preheat oven to 350 degrees. Butter one 9 x 13 casserole dish.
- Mix everything except the potatoes and cornflakes.
- Defrost frozen hash browns and drain out excess water (could put in refrigerator the night before). Blend hash browns and cheesy mixture together.
- Top with crushed buttered corn flakes and place in the oven for 45 minutes to 1 hour. Test to make sure hot all the way through.
- Serve hot and thoroughly enjoy.
