Pesto and Goat Cheese Appetizers

Ingredients

  • 2 T olive oil (divided in half)
  • ¼ cup sauteed yellow onions cut in half and sliced thin
  • 2 cloves garlic, sliced
  • 1 red bell pepper (julienned)
  • salt and pepper to taste
  • 6 oz goat cheese
  • ½ cup pesto (store bought works for me, but without pine nuts and cheese)
  • 2 T chopped almonds or pine nuts

  • 6 oz goat cheese
  • 1 T chopped parsley
  • 1 baguette sliced into rounds and lightly toasted with olive oil and salt

Directions

Heat a small iron skillet on medium with 1 T olive oil, saute onions, garlic and bell peppers until soft.
In a separate skillet, toast almonds or pine nuts until fragrant or golden brown.
Add goat cheese to the warm skillet of onion, garlic and bell pepper.
Add pesto on top of the goat cheese and cover with a lid for 4 minutes until gooey.
Sprinkle cheese with almonds and parsley and serve in the hot skillet with toasted rounds.
